These beautiful, delicate white anchovy fillets are a popular tapa across Spain. They have a very mild flavor perfectly balanced with an extra virgin olive oil and white wine vinegar dressing. Serve them with good crusty bread and a glass of wine.
Boquerones are anchovy fillets that are preserved in vinegar, as opposed to salt like typical anchovies. This means they are not salty at all, and are much flakier and more delicate. They are delicious served on their own, but they can also be wrapped around olives or cubes of cheese and skewered for a great flavor combination.
Our boquerones start as freshly harvested anchovies from the Cantabrian Sea. The anchovies are cleaned by hand, then immediately placed in a mixture of wine vinegar, olive oil and sea salt.
