Although saffron traces its origins to Asia Minor and is now widely produced in countries like China and Iran, most foodies agree that the finest saffron is Spanish. Formed from the dried yellow stigmas of the purple crocus, harvesting is a lengthy and painstaking process. The flowers are hand picked, and then the thread-like stigmas are immediately and intricately plucked for drying. Each crocus contains only three stigmas and it takes over 200,000 stigmas to make one pound of saffron.
