This beautifully cured pork loin is a marriage of exceptional Ibérico pork and the wild Texas countryside. Texas Iberico® pasture-raised pigs wander the Trail’s End Ranch, feasting on acorns, mesquite beans and prickly pear fruit. The pork loin is cured with smoky Spanish paprika and prickly pear juice, which adds a subtle touch of sweetness. We cut the lomo into paper-thin slices here at La Tienda for you to enjoy.
Our 100% Iberico breed pigs are raised outside in the Texas Hill Country where they spend their lives wandering the Trails End Ranch owned by Ashly Martin, a third-generation rancher in Comfort, Texas. The wide-open countryside is covered with Texas live oak and mesquite trees, as well as prickly pear cactus. The pigs have a uniquely Texan diet that adds complex flavor to the pork, ideal for creating an excellent cured sausage.
We partner with a tiny curing house in Georgia famed for its artisan methods. A whole Texas Iberico® pork loin is packed in sea salt, smoked Pimentón de la Vera, Spain’s aromatic paprika, plus prickly pear juice. The sausage maker adds a hint of cayenne to give it an extra note of Texas flavor.
Texas Iberico® pigs are never given antibiotics and they live their entire lives outside. They are certified Animal Welfare Approved by the AGW organization.
Several years ago a herd of Ibérico pigs was brought to the US from Spain. A group of them were released on Ashly Martin’s 1500-acre ranch in Texas, a landscape strikingly similar to the 'dehesa' forest of western Spain. Texas live oaks produce a tasty acorn much like those found in Spain. The Ibérico pigs were happy to munch on these acorns, but it was a pleasant surprise to see how much they enjoyed sweet mesquite beans and prickly pear fruit. Each of these nuts and fruits are full of nutrition and antioxidants that add a uniquely Texan flavor to the pork.
Texas Iberico™ Sweet Prickly Pear Cured Lomo won the 11th Annual Good Food Awards in the Charcuterie category. The entry was chosen from a pool of over 2000 entrants, including 32 finalists across 22 brands in the USA. This prestigious award recognizes the food crafters that are leading the way in quality, sustainability, and socially responsible production.
