Smoked Paprika

This powerfully flavorful smoked paprika is the secret spice of Spain. Pimentón de la Vera adds a key flavor to paellas, fabada and other Spanish dishes. It crosses into regular American cuisine as a seasoning for barbecue pork, kebabs, and the best deviled eggs you will ever try. The secret to its flavor is long smoking over holm oak logs, lending it an intensity of flavor you can't find in other paprikas. Pimenton de La Vera comes in three varieties -- sweet (dulce), bittersweet/medium hot (agridulce) and hot (picante).
