This boneless Jamón Ibérico de Bellota by Montaraz makes it easy to slice and serve this finest of all hams. Each acorn infused slice of ham has a meltingly delicious flavor you will not forget. This all natural ham is perfectly aged for over three years in the famous region of Extremadura and is ready to slice and serve.

A boneless jamón can be cut mounted in a special holder and carved by hand or cut in a mechanical slicer for perfectly thin slices. This jamón comes in two individually packaged half-pieces so you can share with friends or save for later.

Montaraz created this UNICO version of Ibérico de Bellota ham to showcase their finest jamón. They start with only 100% pure-breed, acorn-fed Ibérico pigs that spend their lives outdoors on the beautiful dehesa countryside. They use only sea salt to cure the hams, with no nitrates or nitrites, so all you will taste is the pure flavor of bellota jamón.

Bellota is Spanish for acorn. Only a small portion of Ibérico pigs get to feast on acorns during the ‘montanera’ season because there is a limited supply of oak trees to provide the sweet nuts. Each pig is allowed over 2 acres to forage so that they can eat as many acorns as they like.

Because of this diet and the plentiful exercise, the hams are infiltrated with rich, beneficial fats. They are then aged for over three years and as the fat melts away, it bathes the ham with incredible flavor. Only when they are perfectly cured will the Montaraz jamón master allow them to be sold.

Montaraz is in the DOP Extremadura, a denomination of origin similar to a wine appellation. Each part of the process is monitored by an independent organization to ensure the best quality - from the origins of the pigs, to the levels of oleic acid, to the final packaging.

For over 125 years Montaraz has aged fine Ibérico hams. The fourth generation of the family now supervises the aging of these magical hams.

Serve sliced Jamón Ibérico de Bellota at room temperature to allow its complex flavor to shine. Carefully wrap this boneless ham in plastic and store in the refrigerator between uses.

Use and Care

Store your boneless jamón in the refrigerator, wrapped in plastic or butcher paper.

Boneless hams can be divided into pieces or can be sliced with an electric slicer. Prior to using an electric slicer, we recommend putting the ham in the freezer for about 20 minutes to make it easier to slice. Extra pieces can be vacuum sealed, or tightly wrapped, and stored in the refrigerator for 4 to 6 weeks.

Small white spots are amino acids found in aged meat and cheese products and are perfectly safe to eat.

Serve the slices at room temperature.
