Infused with a delicious combination of pork, fresh scallions, onion and pimentón (paprika), Choripaisa are a Colombian variety of cured pork sausages.
The combination of fresh ingredients and spices make them a great appetizer for your next barbecue. They are fantastic grilled or sauteed and make a great addition to any recipe calling for a chorizo style cured sausage.
Your chorizo will arrive cold. It can be stored in the refrigerator for up to one week or for up to 8 weeks in the freezer.

"Artisan sausage and delicious! However, it is not quite Colombian. I'm not sure what it is about it because the flavors are soo close!!! I'm certainly not an expert, but I would suggest maybe reduce the herbs by half, lower the acidity because it almost seemed citrus, and add more trim bits of fat. A high quality product though, but I probably wouldn't buty this particular style again just because it's not quite like any of the chorizo I have had in Colombia. Sorry, would love to try again though. SEE MY REVIEW on "Colombian Morcilla", which was much much better."
