This D.O. Gran Reserva Manchego, made in small batches by Dehesa de Los Llanos, comes from raw sheep’s milk. It’s aged more than 9 months, and is full-bodied, nutty, grassy, and a little piquant, with a firm flaky texture. Serve this cheese alongside a bottle of a fruit-forward big red wine, or add a few slices of membrillo paste, honey, and almonds for a simple and memorable dessert.
