Now this is what a pork tenderloin should taste like! Juicy, tender and marbled, it is worlds away from the typical tasteless tenderloin. Sear it on the grill, or in your cast iron skillet.

These pork tenderloins come from Iberico pigs raised on the Trails End Ranch by Ashly Martin, a third-generation rancher in Comfort, Texas. The countryside is dotted with Texas live oak, mesquite trees and prickly pear cactus. The pigs roam the countryside, foraging for acorns, grass, herbs, sweet mesquite beans, prickly pear fruit and any other wild delicacies they can find. This extraordinary diet imparts intense flavor to the pork.

A few years ago, a group of purebred Iberico pigs was flown from Spain to America. When they arrived on the 1,500-acre ranch the hearty animals adapted easily to the hill country of Texas, a similar environment to the 'dehesa' rangeland of western Spain. The acorns, mesquite beans and prickly pear fruit that they eat are full of nutrition and antioxidants that add a uniquely Texan flavor to the pork.

All of the Texas Iberico® pigs live outside their entire lives on one ranch, wandering the pasture together with over an acre of rangeland per animal. The pork is certified Animal Welfare Approved by the AGW organization, acknowledged by Consumer Reports as the only “highly meaningful” food label for farm animal welfare.

You will receive this pork frozen, delivered on dry ice. Thaw before cooking. The USDA recommends cooking all whole cuts of meat (including pork) to 145°F as measured with a food thermometer placed in the thickest part of the meat.
