We have searched for the best Magdalenas in Spain for years, and these are by far the finest, made with real olive oil and fresh eggs. This is the same recipe as our wildly popular classic Magdalenas, but in a shape popular in the region of Valencia.
We usually serve these Magdalenas Valencianas warmed in the toaster oven along with a hot cup of coffee or tea for a simple Spanish-style breakfast. But we have been also known to substitute them for cornbread or English muffins as part of an American breakfast with scrambled eggs and bacon!
