Yema quemada – Spain’s answer to traditional French crème brûlée – is a delicious take on the classic turrón from Vicens. Freshly roasted almonds are finely ground and mixed with egg yolks and cane sugar, then toasted by hand with a red hot iron to give the surface a beautifully burnished color and deeply caramelized flavor.
Torrons Vicens has been making high-quality, traditional, artisanal nougats since 1775 in the town of Agramunt, in Spain’s Catalonia region. Torrón is so important to Agramunt, and to all of Spain, that it was declared a protected product by both Spain and the European Union, giving “Torró d’Agramunt” its own IGP (Indicación geográfica protegida).
