Morcilla is a delicious black sausage enjoyed across Spain. Sliced and grilled, it has a crisp bite and amazing flavor. It is also an essential ingredient for Spanish soups and stews.

Peregrino morcilla de arroz is made with pasture-raised pork, paprika and garlic. This version includes rice, which adds a lightness and makes it perfect for grilling.

We work with a small sausage maker in Atlanta to create these artisan morcillas following a classic Spanish recipe.
