Chef José Andrés sources this fine vinegar from artisan producer Marchenilla in Jeréz de La Frontera for his personal collection. Aged sherry vinegar is mixed with a small amount of Pedro Ximénez wine, pressed from grapes that are semi-dried in the sun to concentrate sweetness. The result is a mildly sweet vinegar with a dynamic, complex flavor. The vinegar is aged using the traditional Solera process, where vintages are mixed in oak barrels every year, with some going back many years.
