This pisto is a heavenly mix of fresh roasted vegetables, stewed slowly until the flavors meld perfectly. Similar to a ratatouille, pisto is traditionally served warm, topped with an over-easy egg or slices of Manchego cheese. It is also a delicious side dish for seafood or a tasty snack on its own.

This pisto from Navarra is made from ripe tomatoes, green and red bell peppers, fresh zucchini and onions all cut by hand and simmered in olive oil for hours.
