These pork loins come from Iberico pigs raised on Trails End Ranch by Ashly Martin, a third-generation rancher in Comfort, Texas. The pigs roam freely, eating acorns, grass, herbs, sweet mesquite beans, prickly pear fruit and other wild foods. This special Texan diet imparts a complex, full flavor to the pork.
A few years ago, a herd of purebred Iberico pigs was flown from Spain to America. Upon arriving at the 1,500-acre ranch, the pigs thrived in the Texas hill country, a landscape similar to the ‘dehesa’ rangeland of western Spain.
All Texas Iberico® pigs live outdoors their entire lives, with over an acre of rangeland per animal. Texas Iberico® pork is certified Prop 12 compliant, which means the animals are raised with care, meeting or exceeding the animal welfare standards set by California Proposition 12.
You will receive this pork frozen, delivered on dry ice. Thaw before cooking. The USDA recommends cooking all whole cuts of meat (including pork) to 145°F, measured with a food thermometer in the thickest part of the meat.
