This hand-cut D.O. Gran Reserva Manchego, made in small batches by Dehesa de Los Llanos, comes from raw Manchega sheep’s milk. It was once named the World’s Best Cheese at the World Cheese Awards, the only Spanish cheese to earn the distinction. It’s aged more than 9 months, and is full-bodied, nutty, grassy, and a little piquant, with a firm flaky texture. Serve this cheese alongside a bottle of a fruit-forward big red wine, or add a few slices of membrillo paste, honey, and almonds for a simple and memorable dessert.
