Purebred Iberico pigs are pasture raised on Trails End Ranch by Ashly Martin, a third-generation rancher in Comfort, Texas. The ranch is home to Texas live oak and mesquite trees, as well as prickly pear cactus. The pigs graze on acorns, grass, herbs, sweet mesquite beans, prickly pear fruit and other wild delicacies, adding intense flavor to the pork.
A few years ago, a group of purebred Iberico pigs was flown from Spain to America. Released on the 1,500-acre ranch, these hearty animals thrive in the Texas hill country, a similar environment to the ‘dehesa’ rangeland of western Spain. The pigs feast on acorns from Texas live oaks, sweet mesquite beans, and prickly pear fruit, all rich in nutrition and antioxidants, giving the pork a distinct Texan flavor.
All Texas Iberico® pigs live outdoors their entire lives on one ranch, with over an acre of rangeland per animal. The pork is certified Animal Welfare Approved by the AGW organization, recognized by Consumer Reports as the only “highly meaningful” food label for farm animal welfare.
You’ll receive this pork frozen, delivered on dry ice. Thaw before cooking. The USDA recommends cooking all whole cuts of meat (including pork) to 145°F, measured with a food thermometer in the thickest part of the meat.
