In 1910, Inés Rosales started to make olive oil tortas (tortas de aceite) by hand and sold them at the train station in Sevilla. Since then, this Andalusian specialty has become well-known throughout Spain. Inés Rosales sweet olive oil tortas are still made by hand with the same recipe Inés Rosales created more than 100 years ago.
These anise-flavored tortas de aceite are just a little sweet – they're perfect in both sweet and savory applications, slathered with a little jam or chocolate spread, served alongside cheese and almonds, or as a simple little treat with a cup of coffee or tea.
