Tetilla, a soft, mild cow’s milk cheese comes from Galicia, in the rocky northwest of the country. Its distinctive shape gives the cheese its name, which means “little breast.” It is pale yellow in color, and can range from soft to semi-firm depending on how long the cheese has been aged. It’s great served alongside raw fruit with a bottle of crisp Galician white wine, like Albariño or Treixadura from Ribeiro. Tetilla also melts well, so it’s a good option for grilled cheese or baked dishes.
