These exceptional pork steaks come from Iberico pigs raised on Trails End Ranch by Ashly Martin, a third-generation rancher in Comfort, Texas. The pigs roam freely, feasting on acorns, grass, herbs, sweet mesquite beans, prickly pear fruit and other wild foods. This uniquely Texan diet imparts a complex, full flavor to the pork.
Several years ago, a herd of purebred Iberico pigs was transported from Spain to America. Upon arriving at the 1,500-acre ranch, the pigs flourished in the Texas Hill country, a landscape similar to the ‘dehesa’ rangeland of western Spain.
All Texas Iberico® pigs live their entire lives outdoors, each with access to over an acre of rangeland. The pork is certified Animal Welfare Approved by the AGW organization, which Consumer Reports recognizes as the only “highly meaningful” food label for farm animal welfare.
Your pork will arrive frozen and delivered on dry ice. Be sure to thaw it before cooking. The USDA advises cooking all whole cuts of meat, including pork, to an internal temperature of 145°F, measured with a food thermometer in the thickest part of the meat.
