Paella, one of the most iconic Spanish dishes, gets its name from the pan in which it is cooked. This traditional steel paella pan is the same design that Spaniards have used for centuries, with a dimpled bottom to ensure even heating. As you use it more and more, your paella pan will become seasoned, changing color and becoming more resistant to rust. After each use, clean the paella pan as you would any steel or cast-iron pan: wash it by hand, then season it with a light film of oil to prevent rust.
