This kit contains everything you need for seafood paella except the paella pan! The seafood broth is infused with shrimp, crab and fish and it also includes small pieces of cuttlefish and peeled shrimp. Firewood is the secret ingredient that adds an extraordinary flavor to the dish.  Each paella kit from El Paeller contains enough Albufera rice, seafood and broth for cooking in a 15” paella pan. The paella takes 18 minutes to cook once the broth is brought to a boil and serves 2 to 3 people. 

El Paeller uses quality fresh and natural ingredients in all of its cooking bases and paella kits, but the invisible ingredient is firewood. Cooking over a wood-burning fire adds unique nuances to the flavor, aroma, and color to each product. Mestre Paeller (Valencian for “Paella Master”) Rafa Margós has more than 25 years of experience cooking paella over fire. His mastery of these techniques has led him to advise chefs such as José Andrés and Quique Dacosta on their wood-fired paella projects.  

1. Gently pour the contents of the broth and vegetable can into a 15” paella pan. Spread the contents evenly. 

2. Cook on high heat until the broth begins to boil. 

3. Add the rice and distribute it evenly in the paella pan. Do not stir or mix the rice during the rest of the cooking process. 

4. Keep the heat on high for 5 minutes and add salt to taste if necessary. 

5. Reduce the heat to medium and cook for 8 more minutes, making sure that the mixture maintains a constant and uniform boil. 

6. Increase the heat to high for 5 more minutes or until the liquid has completely been absorbed by the rice. 

7. Turn off the heat and let the paella sit for three minutes prior to serving. 

Store unopened paella kit in a cool, dry place prior to use.
