Spain is a nation of seafood lovers. With the Atlantic Ocean and the Bay of Biscay on one side and the Mediterranean Sea on the other, a wide variety of fish and shellfish is available in the country. Anchovies are popular, both as anchoas aged in salt and preserved in olive oil and as boquerones marinated in vinegar and oil. Tinned seafood is considered a delicacy in Spain and is served straight out of the can in many bars.
